Secrets of cooking delicious shrimp

Shrimp can be simmered in a slow cooker, baked in a convection oven, boiled in a pressure cooker, fried in batter or boiled in beer. Seafood is always healthy, so you can come up with a variety of ways to cook shrimp and serve them with delicious sauces. Shrimp decorate any side dish and make the dish tasty, bright and original! And they will add bright flavor accents to your dishes!

Shrimp contain a huge amount of nutrients (PUFAs, micro- and macroelements, proteins), and these crustaceans are a truly dietary product. In order for shrimp meat to be tender and not rubbery, you need to be able to cook it correctly. The calorie content of 100 g of the finished dish is 95 kcal, provided that sauces are not used.

How to properly cook frozen unpeeled shrimp

Stores sell raw and cooked crustaceans, and both varieties are sold deep frozen. Shrimp meat is very tender and does not tolerate prolonged heat exposure, and if it is overcooked, it will become tough, and if it is not cooked enough, it can cause indigestion.

Raw

The cooking time for crustaceans that have not been pre-cooked is 3-8 minutes. The duration of thermal exposure depends on their dimensions, and on the type of water they are placed in - cold or boiling. Freshly frozen shrimp require defrosting, which is done under running warm water or naturally.

Boiled

The opinion that boiled-frozen crustaceans do not require pre-cooking is erroneous. Such semi-finished products also require thermal exposure, albeit limited in time. Unpeeled boiled-frozen crustaceans are cooked for no more than three minutes, although the cooking time may vary slightly, because the size of the individuals matters.

Recipe for cooking peeled frozen shrimp

Fresh frozen peeled shrimp in spicy brine

To prepare an appetizer that is ideal for immediate serving, you will need:

  • half a kilogram of medium-sized crustaceans, freed from shells and heads, which have not undergone preliminary heat treatment;
  • 1.5 liters of water;
  • 1.5 tbsp. l. salt;
  • 200 g fresh dill;
  • a pair of bay leaves;
  • 6 pcs. allspice.

Technology:

  1. Place all ingredients in water, except seafood and dill.
  2. Place the pan on the fire.
  3. Meanwhile, prepare the dill: rinse and finely chop.
  4. Place previously defrosted seafood and chopped herbs into boiling brine.
  5. Let simmer for 3 minutes.
  6. Remove with a slotted spoon along with the dill.
  7. The use of sauces is not implied, because this dish contains dill, which is not only a decoration, but also an ingredient that gives the product a unique flavor.

Boiled-frozen peeled shrimp with vegetables

To prepare the following dish you need:

  • half a kilogram of shrimp;
  • 1.5 liters of water;
  • 2 tbsp. l. finely chopped vegetables (carrots, onions, parsley root);
  • 1.5 tsp each tarragon and salt;
  • pepper and spices - optional (you can avoid using them completely).

What to do:

  1. Thaw seafood, place in a saucepan along with vegetables and pour boiling water over it.
  2. Add remaining ingredients.
  3. Boil for 3-4 minutes.
  4. Remove the crustaceans with a slotted spoon.

How to deliciously cook king prawns

This product is distinguished by its larger size and specific taste: king prawns have more sweetness than regular ones. Before cooking, they need to be defrosted - naturally (followed by rinsing) or under running warm water.

Place a container of water on the stove, the amount of which should be three times the amount of product (take 3 liters per 1 kg). After the liquid boils, you need to salt it (30 g of salt per 1 liter), and add your favorite spices and seasonings (pepper, bay leaf, coriander, cloves, etc.).

The product is loaded immediately after the water boils. During the cooking process, foam will inevitably appear, which must be removed with a slotted spoon.

The duration of temperature exposure depends on the color of the crustaceans. If the king prawns are bright pink, then this is a semi-finished product, the cooking time of which is no more than 5 minutes. Fresh frozen products are grey-green in color and should be cooked for a maximum of 8 minutes.

If you managed to buy crustaceans already peeled from shells and without heads, then the cooking time is reduced by 1/3, and the portion of salt is halved.

Sauces

Sauces add flavor to the finished dish, which is prepared the same way in almost all cases. The most common option is “ketchunez” - a mixture of ketchup and mayonnaise.

Traditionally, king prawns are eaten with a dressing consisting of olive oil and lemon juice. People who are not afraid for their figure make a high-calorie sauce consisting of grated hard cheese, chopped garlic and a mixture of sour cream and mayonnaise.

How to cook tiger prawns

Technology cooking tiger prawns

  1. Boiled-frozen tiger prawns require little heat treatment and should be cooked for a maximum of two minutes from the moment of boiling. For a liter of water you need to take a couple of teaspoons of salt and your preferred spices. The volume of brine should be 2 times the amount of product. The finished delicacy is served immediately after cooking.
  2. Fresh frozen. The product requires preliminary defrosting, after which the intestinal tape must be removed. Removal of the shell and heads is at personal discretion.
  3. The time of temperature exposure depends on both the “caliber” of crustaceans and the presence/absence of a shell on them. On average, cooking varies within 3-5 minutes from the moment the water boils again, in the same way as for a boiled frozen product. It is noteworthy that for peeled tiger shrimp, the portion of salt is halved.

Delicious recipes for boiled shrimp in beer brine

For 1 kg of the main ingredient you will need:

  • 3 liters of water;
  • a pair of bay leaves;
  • 4 peas each of allspice and black pepper;
  • 3 tbsp. l. salt (without a slide);
  • 400 g of beer.

Preparation:

  1. Boil water with the addition of spices and the required amount of light beer.
  2. Boil the brine for 3 minutes.
  3. Place the shrimp in the pan and wait until it boils.
  4. Record the time, which depends on the size of the crustaceans.
  5. Select the crustaceans with a slotted spoon and pour ice water over them (this will speed up cleaning).
  6. Serve with any dressing.

“Classics of the genre”: shrimp with lemon

The classic recipe involves the use of the following components:

  • unpeeled shrimp – kilogram;
  • water – 3 l;
  • salt – 2 tbsp. l.;
  • lemon - a little less than half;
  • 2 bay leaves.

Preparation:

  1. Place the lemon, cut into slices, salt and bay leaf into the pan.
  2. Pour the required amount of water into the container and put on fire.
  3. After the brine boils, add the shrimp.
  4. The duration of cooking depends on the size of the crustaceans and the state in which they are (fresh frozen or boiled-frozen).

Peeled shrimp in milk and onion sauce

To make the task easier, you should purchase 1 kg of boiled and frozen crustaceans without shell, and also prepare:

  • glass of water;
  • 2 glasses of milk;
  • 70 g butter;
  • onion – 200 g;
  • 50 g flour;
  • 2 tbsp. l. finely chopped dill;
  • 1.5 tbsp. l. salt.

Technology:

  1. Boil seafood in the usual way, depending on the state in which they are, the only difference being that you need to put dill in the water.
  2. When the shrimp rise to the surface, turn off the heat completely and leave the pan on the stove.
  3. Finely chop the onion, fry it, add water and simmer a little.
  4. In another frying pan, fry the flour and pour milk over it.
  5. Combine the contents of the two pans and let it simmer for 5 minutes.
  6. Use a slotted spoon to catch the seafood, place it on a dish and pour the milk and onion sauce on top.

Note to the hostess

  1. The numbers on the packaging indicate the number of individuals per kilogram/pound. For example: crustaceans 50/70 will be much larger than their “brothers” labeled 90/120.
  2. It is impossible to determine the exact cooking time for shrimp from the moment the water boils, and therefore it is recommended to be guided by their size: small peeled – 1 minute; medium – 3 min; royal and tiger - 5 minutes. The “signal of readiness” is the emergence of crustaceans to the surface and their acquisition of a bright pink color.
  3. An abundance of spices and seasonings is not always good. The classic ingredient is lemon, a couple of slices of which are placed in the pan along with the required amount of salt.
  4. When cooking seafood in a slow cooker, no water is added (for half a kilo of crustaceans - 1.5 tablespoons of salt and ground black pepper to taste).
  5. To obtain a rich broth, it is recommended to add seafood to cold water.
  6. The ideal combination of seafood and water is 1:3.
  7. Defrosting crustaceans in the microwave is unacceptable.

There are wild shrimps, that is, which themselves reproduce in the sea, or domestic ones, which are grown in special farms. They are absolutely no different from their brothers who swim freely in the endless sea.

Shrimp, like all seafood in principle, is a quickly perishable product. If you bought fresh shrimp, but do not want to cook them right away, then they need to be placed in a container with ice and water. Stored in the refrigerator this way for no more than 24 hours. Frozen shrimp can be stored in the freezer for up to two months.

This recipe is for lovers of spicy food, it was given to me by my friend who lived in India for several years. Today I want to share it with you.

Products:

- 1 kg. large shrimp
- 1 spoon of fresh parsley (leaves only for decoration)
- skewers for barbecue
For the sauce:
— 120 gr. sour cream
- 1 small chili pepper (you can increase or decrease the portion depending on how spicy you like the dish)
- 20 gr. fresh grated ginger
- 1 small clove of garlic
- 1 onion
- 1 spoon of paprika
- 1/3 spoon turmeric
- 50 grams of olive oil
- salt

Remove the head and shell from the shrimp, leaving only the tail. Mix all the ingredients for the sauce in a bowl and place the shrimp in it. Mix well with your hands, cover the bowl with cling film and place in the refrigerator for 2 hours. Preheat the oven on the grill program and place parchment paper on a baking sheet.

Thread 2-3 shrimp onto a skewer and place on a baking sheet, which must be placed on the top shelf of the oven. Cook for 1-2 minutes on each side. Sprinkle the finished kebabs with parsley and serve immediately.

Shrimp fried in batter

Dishes with shrimp offer us a lot of options, but this one is so simple and light that it gives a simply delicious taste.

Products:

- 180-200 grams of flour
- oil for frying
- salt
- 1.5 glasses of water
- 1 kg. shrimp (medium size)

For this recipe, you can also use small shrimp that do not need to be peeled. Our shrimp are medium in size, so they need to be cleaned from the head and shell, leaving only the tails. Wash under running water and leave in a colander to drain. Now let's prepare the batter. In a deep bowl, mix water, flour and salt. Let's put the frying pan on the fire, pour in oil for frying, no need to feel sorry, and let it heat up well. Dip each shrimp in batter and fry in hot oil for 2 minutes on each side. Lay a paper towel in two layers on a plate, remove the shrimp with a slotted spoon and place on the paper. Fried shrimp are ready.

Shrimp with sesame seeds

Products:

- 1 kg. shrimp
— 150 gr. sesame
- 2 eggs
- a little flour
- salt
- pepper
- 1 spoon of vodka
- oil for frying

Peel the shrimp from the head and shell, leaving the tails behind. Beat eggs with salt, pepper and vodka. Place the frying pan on the fire and let the oil heat up well. Dip the shrimp first in flour, then in the egg, and lastly in sesame seeds. Fry over high heat until golden brown, about 1-2 minutes on each side.

Shrimp with feta

Wonderful recipe, very tasty and satisfying. Adults and children like it. I advise you to definitely prepare it, it takes very little time to prepare, and the result is excellent.

Products:

- 500 grams of shrimp
- 100 grams of onion
– 100 grams of olive oil
- 1 tbsp. spoon of finely chopped garlic
– 1 vegetable cube
- half a hot pepper
— 150 gr. cherry tomato
- 30 gr. balsamic vinegar
— 150 gr. water
- salt
- some fresh basil
- 100 gr. feta cheese

This recipe works with either fresh or frozen shrimp. Frozen ones are usually sold already peeled, so you just need to defrost them. Fresh ones need to be cleaned of the head, shell and tails.

Fry finely chopped onion and garlic in a frying pan. Cut the tomatoes into two parts and add to the pan, add basil, hot pepper and salt. Continue to simmer for 2-3 minutes and then pour in the balsamic vinegar.

Mash the feta with your hands and add to the pan. Now it’s time to put the shrimp in the gravy, lightly salt and mix gently with a wooden spoon. Continue cooking for no more than two minutes. This dish goes great with rice and green salad.

Shrimp in the oven with garlic

A simple, flavorful, delicious shrimp dish.

Products:

– 15 shrimps
- juice from one lemon
- 7 green peppers
- 1 large onion
- 4 cloves of garlic
- 3-4 ripe tomatoes
- 1 spoon of paprika
- ? teaspoons curry
- 1 small hot pepper
- 2/3 cup (about 150 g) olive oil
- salt pepper

Place the peeled and washed shrimp in a bowl, add lemon juice, paprika, curry and salt. Mix everything, cover with film and put in the refrigerator for 1 hour to marinate. Wash the tomatoes and peppers and chop them finely. We also chop the tomatoes, onions and garlic.

In a deep frying pan, heat half the oil and simmer the onion with garlic and hot pepper, then add the chopped tomatoes and leave to simmer for 5 minutes.
Place the peppers on a small baking sheet, marinated shrimp on top, pour in the gravy, add salt, pepper and the remaining oil.

Place the baking sheet in a preheated oven at 180 degrees. for 30-35 minutes.
Serve the dish hot. Can be served with fried potatoes or rice.

Shrimp with fennel and orange

Products:

- 1 kg. shrimp
- 2-3 fennel
- 3 oranges
- 1 spoon of butter
- a little oil for frying
- salt pepper

Before squeezing the juice from oranges, we need to grate one orange on the finest grater to get shavings. You will need approximately two teaspoons. Then you can squeeze out the juice; you will need one and a half cups of juice. Pour the juice into a small saucepan, put it on the fire and let it simmer for so long that half the juice remains.

Peel the shrimp from the head and shell, use a small sharp knife to cut open the belly and remove the intestine. Heat the butter and vegetable oil in a frying pan and fry the shrimp for 2 minutes on each side. Place the shrimp on a plate, pour orange juice and shavings into the oil where they were fried, and simmer for 1-2 minutes.

Cut the fennel into two parts, and then each part into thin oblique pieces. Simmer in a frying pan until soft but not overcooked. Salt and pepper.
Place fennel on a platter, top with shrimp and garnish with orange slices.
Note: do not throw away the shrimp heads; you can make a wonderful soup.

Shrimp in a pan with lemon and parsley

- 1 kg. fresh shrimp (large or medium)
- 3 tablespoons olive oil
- 1 or more (to your taste) clove of garlic
- 1 bunch of parsley (leaves only)
- shavings from one lemon
- juice from one lemon
- salt pepper
- a little paprika

Peel the shrimp from the shell, remove the intestines, no need to remove the heads for better taste. Heat a deep frying pan over very high heat, pour in the oil and add the shrimp. Fry for 2 minutes on one side and 1 minute on the other. If the shrimp are king (they are very large), then you need to fry them for a few seconds longer, but if they are small, then you will need a little less time. Along with the shrimp, simmer the chopped garlic. As soon as they are ready, pour the lemon juice into the pan and after a few seconds remove from the heat. Sprinkle with salt, pepper, lemon shavings and chopped parsley leaves. Mix well and place on a plate. You can add olive oil.

Shrimp fried in batter with soy sauce

Products:

- oil for frying
— 800 gr. large shrimp
- 3 cups flour
- 2 cups of water
- 1 egg

For the sauce:

- 2 cups of water
- ? cups of soy sauce
- ? cups of sweet wine
- 1 spoon of water

We will clean the shrimps from the head and shell, we will not tear off the tails. Wash it and leave it to drain. When we fry, the shrimp should not be filled with water, otherwise the oil will splatter in all directions. Heat the oil in a deep frying pan over medium heat. In a bowl, mix 2 cups of flour, water and egg, mix everything well to form a beautiful batter.

First dip the shrimp in flour, then in batter and fry for 2 minutes on each side. Meanwhile, mix all the ingredients for the sauce. Place the finished shrimp on a dish and serve the sauce next to it. It is easier to grab the shrimp by the tail and dip it into the sauce. That's why we didn't tear off the tails. Bon appetit.

Shrimp with tomatoes and garlic

Products:

– 15 king prawns (fresh or frozen)
- juice from half of one lemon
- 4-5 green peppers
- 1 large onion
- 3 cloves of garlic
- 5 large ripe tomatoes
- 1 spoon of paprika
- a little curry
- 1 red chili pepper
- approximately 150 gr. olive oil
- salt and a little black pepper

Peel the shrimp, wash and leave to drain. Then place in a small bowl, sprinkle with paprika, salt, add curry, and sprinkle with lemon juice. Cover the bowl with film and place in the refrigerator for one hour.

Chop the garlic finely and the onion into thin strips. Cut 3 peppers, remove seeds and chop coarsely. Cut three tomatoes into four parts. Grind everything in a blender, not forgetting to add chili.
Heat half a portion of oil in a frying pan and lightly fry the onion and garlic. Add all ingredients from the blender and simmer for 5 minutes. Cut the remaining peppers and tomatoes into strips.

On a small baking sheet, maybe round, place the shrimp, tomatoes and peppers on top, and at the end the prepared gravy. Drizzle with remaining oil, lightly add salt and pepper.
Preheat the oven at 180 degrees. Cook shrimp for 30-35 minutes. Goes great with French fries.

Shrimp boiled with lemon

Shrimp are not only a great appetizer, but when combined with pasta, for example, they make an excellent lunch or dinner. I was visiting a friend, and when I arrived for dinner, she cooked shrimp and shells. I’m not a pasta fan, but I liked the ones she cooked with shrimp so much that now I cook it myself.

Products:

- 1000 gr. shrimp
- juice from one lemon
— 110 gr. olive oil
- salt
- a little parsley
- a pack of pasta (shells)

Let's wash our shrimp well. Pour water into a saucepan and add salt. As soon as the water boils, throw in the shrimp and cook for 15-20 minutes (depending on the size). Use a slotted spoon to remove the finished shrimp onto a dish (under no circumstances should we pour out the fish soup. We will boil the shells in it; you will see how this fish soup changes the taste of the pasta when you cook it yourself). Leave the shrimp aside. Turn on the stove again, put it on fire and cook the shells. While the shells are cooking, we will clean our shrimp by tearing off the heads and removing the shell. Let's leave the tail for beauty. Mix olive oil with lemon juice in a glass. Place the pasta on a dish, top with shrimp, pour in oil and lemon and sprinkle with parsley. Delicious!

– 15 large shrimps
— 500 gr. spinach
— 500 gr. tomato
— 6-8 tablespoons of white wine
— 180 gr. olive oil
- 2 cloves of garlic
- a pinch of grated nutmeg
- 1 spoon of sugar
- a little oregano
- salt pepper

Peel and wash the shrimp. Peel the tomatoes (if you pour boiling water over the tomatoes, the peel will come off very easily), remove the seeds and chop finely. Wash the spinach and cut into large pieces.

In a saucepan suitable for frying, heat 4 tablespoons of olive oil. While the oil is heating, finely chop the garlic and place in a saucepan. Stirring constantly, bring until golden brown. Then add the spinach, nutmeg, salt and pepper to the pan. Simmer for five minutes, remove from heat and cover with a lid.

Heat the remaining oil in a frying pan and fry the shrimp for 2 minutes on each side. Pour in the wine and let simmer for another 3-4 minutes. Place the cooked shrimp on a plate. Add the tomatoes and sugar to the pan, return to the stove and simmer for another 5 minutes. Place the shrimp in the pan, add the oregano, and stir gently with a wooden spoon until the shrimp are dispersed throughout the gravy. Serve immediately.

We are all accustomed to the fact that sometimes we cook them and serve them with beer, but the process very rarely goes beyond the framework of this gastronomic stereotype. However, there are many ways in the world to cook shrimp and make them a dish for both lunch and dinner. We have selected the 10 most popular of them and briefly discussed the cooking technique for each.

- Roasting -

This is perhaps the most common and easiest way to cook shrimp. When fried, the surface of the shrimp caramelizes slightly, and their natural flavor becomes more intense. Simply toss them in lightly salted olive oil in a frying pan and cook for 6-8 minutes.

- Ceviche -

Ceviche is a popular way of serving seafood originally from Peru in modern gastronomy. The main role here is played by a marinade of lemon and chili peppers, which adds a piquant taste to fish or seafood. Here, as nowhere else, the freshness of the starting products and strict adherence to the recipe are important.

- Grill -

Classic preparation of shrimp. The method is simple, universal and requires only 5 minutes of time. First, the shrimp are placed for a few minutes in a salted marinade of olive oil, lemon juice and chili, after which they are grilled for 2-3 minutes on each side.

- Boiled shrimp -

Traditional Russian method of preparing shrimp. The role of the marinade here is played by a brine consisting of water with the addition of pepper, bay leaf, dill and garlic. The water is allowed to boil, then cooked for 10 minutes. After creating a flavor base, add shrimp, salt and cook for another 5-7 minutes.

- Shrimp in a wok -

This method is distinguished by its sophistication and is quite suitable for the role of a main dish. The shrimp are fried in a wok or large frying pan in organic ghee or avocado oil, to which a generous amount of garlic is first added. As soon as the oil heats up, broccoli and green pea pods are placed in it 1-2 minutes before the shrimp, followed by the shrimp. After adding the shrimp, increase the heat under the pan to medium-high and cook for another 2-3 minutes, stirring constantly and adding salt, pepper, spices and white wine. Then the heat is reduced and the dish is cooked for another 5-8 minutes until the vegetables become soft. Before serving, sprinkle the dish with a small amount of lime juice.

- Shrimp in pesto sauce -

Another fairly simple cooking method, which, among other things, allows you to add new shades to the taste of shrimp. The cooking process is similar to grilling, but in this case they are mixed with 1/2 cup of pesto. Then they are skewered and grilled. Alternatively, you can use the top grill mode in the oven, placing them on a baking sheet. They cook quickly - 3-4 minutes on each side.

- Shrimp in chimichurri sauce -

Chimichurri sauce is so versatile that you can cook almost any dish with it. In this case, it is used as a marinade for shrimp. The recipe is extremely simple: mix peeled shrimp with sauce in a bowl and fry on the grill or in a grill pan. After cooking, garnish the dish with the remaining sauce.

- Glazed shrimp -

The key ingredient for caramelization is a marinade of olive oil, honey, soy sauce and vinegar, to which garlic, salt and pepper are added. The shrimp are soaked in the marinade, and then marinated in the refrigerator for an hour. Once the marinade process is complete, the shrimp are grilled for 3-4 minutes on each side. During the frying process, they are additionally poured with marinade to enhance the glazing.

- Shrimp in sweet and sour sauce -

This method of preparing shrimp came to gastronomy from China. Cooking takes place in 2 stages. First, the sauce itself is mixed, which consists of fish and oyster sauces, sugar, starch, ketchup and chili sauce. This is what the Thai version of the sauce looks like, but in Russia it has many local interpretations. The shrimp themselves are peeled and fried in a frying pan with garlic, onion and pineapple. After 3 minutes of frying, add sweet and sour sauce to the pan.
