I couldn’t stay away from the topic of Bulgarian salads...I’ve been living in this sunny country for the second year now, so I’m very familiar with the names of such salads as Shopski, Ovcharski, Greek. Almost all salads contain feta cheese, olives, cucumbers and tomatoes. By the way, in Bulgarian cuisine, mayonnaise is practically not used when preparing salads; they are seasoned with olive or linseed oil, and the latter is very healthy and I like it with wine or apple cider vinegar. I really love Bulgarian cuisine. All their dishes are hearty, but at the same time, harmless to the figure. Of the Bulgarian salads, Shopski is my favorite. Peel the tomatoes from the stem and cut into triangles. Cut cucumbers, mushrooms and peppers into thin slices. Cut the onion into small cubes.

Mix it all, season with olive oil, salt and put in a salad bowl. Top with boiled eggs and grated feta cheese or feta cheese, sprinkle with finely chopped herbs.

Bean salad

  • large salad beans – 300-400 g
  • onions – 1 pc.
  • pickled cucumbers – 2 pcs.
  • parsley – 50 g
  • vinegar or lemon

Before you cook the beans, you need to soak them in water overnight. Cook them until they are completely soft. After the water boils for the first time, drain it and add another one. To make the beans cook faster, you can add 1 spoon of vegetable oil.

Cool the beans and mix with finely chopped onions, cucumbers and parsley. Season the salad with olive or vegetable oil. Sprinkle a little vinegar or lemon juice.

Potato salad

Ingredients needed to prepare the salad:

  • potatoes – 4-5 pcs.
  • olives – 10-15 pcs.
  • onion – 1 pc.
  • parsley dill
  • vegetable or olive oil
  • vinegar

Potatoes should be boiled in their skins, peeled and cut into medium cubes. If desired, the potatoes can be boiled already peeled. Add finely chopped onion, halves of olives, dill and parsley to the potatoes.

Mix the salad, season with olive oil, sprinkle with vinegar and add a little salt.

Ham salad

Ingredients needed to make ham salad:

  • ham – 150-200 g
  • canned corn – 0.5 cans
  • carrots – 1-2 pcs.
  • cucumbers – 2 pcs.
  • tomatoes – 2 pcs.
  • cabbage – 150-200 g
  • egg – 1 piece
  • cheese – 100-150 g
  • greens to taste
  • mayonnaise

Take a deep salad bowl and lay out the salad in layers. Place ham, cut into small cubes, on the bottom layer. Pour over a thin layer of mayonnaise. Place grated carrots and shredded cabbage on top of the ham.

Spread the third layer with tomatoes and cucumbers, cut into 4 pieces. We make a thin mesh of mayonnaise. Then lay out the corn, sprinkle with finely chopped dill and parsley. Lubricate with mayonnaise.

The last layer is grated cheese. Decorate the salad with chopped eggs and mayonnaise.

Salad with shrimp

Ingredients needed to make shrimp salad:

  • shrimp – 1 kg
  • crab sticks – 500 g
  • lemon – 1 pc.
  • lettuce leaves – 1 bunch
  • tomatoes – 2 pcs.
  • parsley – 1 bunch
  • onion – 1 pc.
  • pitted olives – 1 jar
  • Adyghe cheese or feta cheese – 300-400 g
  • olive or vegetable oil
  • salt and pepper

Boil shrimp in salted water and peel. Cut crab sticks into large cubes. We also cut the tomatoes into small pieces. Finely chop the parsley. Chop the lettuce leaves.

Cut Adyghe cheese or feta cheese into large cubes, cut carefully so as not to crumble too much.

Mix shrimp, crab sticks, tomatoes, herbs, cheese and olives.

Squeeze lemon juice, add olive or vegetable oil, salt and pepper to taste. It is advisable to let the salad brew in a cold place for about an hour.

Salad with cheese

Ingredients needed to prepare the salad:

  • Adyghe cheese or feta cheese – 250-300 g
  • tomatoes – 5 pcs.
  • onion – 1 pc.
  • garlic – 3 cloves
  • green bell pepper – 1 pc.
  • vegetable or olive oil
  • salt and pepper

Cut the tomatoes into half rings and the pepper into medium-sized strips. Cut feta cheese or Adyghe cheese into small cubes. Cut the onion into half rings or quarter rings, finely chop the garlic or squeeze through a garlic press.

Mix all ingredients, add salt and pepper, season with vegetable or olive oil.

Salad with olives

Ingredients needed to prepare the salad:

  • potatoes – 3-4 pcs.
  • ham – 100-150 g
  • olives – 10 pcs.
  • dry white wine – 50 ml
  • lemon juice - 3 tablespoons
  • vegetable oil – 40 ml
  • parsley

Boil the potatoes and cut into thin slices, pour in dry white wine, leave to brew for 15 minutes. Finely chop the ham, olives and parsley.

Mix all the products, pour over a dressing of lemon juice and vegetable oil, and add salt. Place in a salad bowl and garnish with chopped parsley.

Cucumber salad

Ingredients needed to prepare the salad:

  • tomatoes – 5 pcs.
  • feta cheese or Adyghe cheese – 100 g
  • onion – 1 pc.
  • cucumbers – 2 pcs.
  • sunflower oil
  • vinegar
  • salt and pepper

Peel the tomatoes, cucumbers and onions, cut the onion into half rings. Cut the cucumbers into slices and the tomatoes into cubes.

Mix the vegetables, add a little salt and season with sunflower oil. Sprinkle a little vinegar. Place the vegetables in a salad bowl, sprinkle feta cheese or Adyghe cheese on top and garnish with herbs.

Radish salad

Ingredients needed to prepare radish salad:

  • radishes 200-300 g
  • celery root – 100 g
  • apples – 200-300 g
  • cheese – 100 g
  • olive or vegetable oil – 50 ml
  • lemon juice – 3 tablespoons
  • mustard
  • green salad

Cut apples and celery root into cubes, radishes into thin slices. Grate the cheese and add to the apples, celery and radishes.

Mix all ingredients, season with olive oil and lemon juice, garnish with lettuce leaves.

Salad with mustard

Ingredients needed to prepare the salad:

  • green salad leaves - 1 bunch
  • sweet bell pepper – 0.5 kg
  • tomatoes – 300 g
  • vegetable or olive oil – 50 ml
  • mustard - 10-15 g
  • parsley
  • lemon juice

Cut the lettuce leaves and pepper into large strips. Add tomatoes, cut into small cubes or triangles.

All vegetables must be mixed and poured with a dressing of vegetable or olive oil, lemon juice, mustard and salt.

Salad with curdled milk

Ingredients needed to prepare the salad:

  • feta cheese or cottage cheese – 200 g
  • potatoes – 3-4 pcs.
  • eggs – 2 pcs.
  • tomatoes – 3 pcs.
  • carrots – 2 pcs.
  • curdled milk or sour cream – 200-250 g
  • vegetable oil -7-8 tablespoons
  • celery root – 100 g
  • parsley

Boil the potatoes and cut into small cubes. Cut tomatoes, carrots and apples into cubes of approximately the same size.

For the dressing you will need to mix grated eggs, yogurt or sour cream, cottage cheese or feta cheese, grated celery and vegetable oil. Pour over the salad, stir, and top with herbs and cheese.

Ingredients needed to prepare the salad:

  • onion – 1 piece
  • small cucumber – 1 piece
  • parsley
  • cheese – 50 g
  • vegetable oil – 50 g

Ingredients needed to make cauliflower salad:

  • cauliflower - 200 g
  • large apple – 1 pc.
  • tomatoes – 2 pcs.
  • cucumber – 1 pc.
  • green peas – 50-100 g
  • grapes – 100 g
  • greens and parsley – 1 bunch
  • sour cream – 5-7 tablespoons

Boil the cabbage in salted water and divide it into small florets. Cut cucumbers, tomatoes and apples into slices. Add green peas and grapes, salt. Pour in sour cream and garnish with dill and parsley.

Eggplant salad

Ingredients needed to make eggplant salad:

  • eggplants – 1 kg
  • tomatoes – 2-3 pcs.
  • bell pepper - 2 pcs.
  • garlic – 3-4 cloves
  • vegetable oil, vinegar
  • salt and pepper

Bake sweet peppers and eggplants in the oven, peel and cut into strips. Scald the tomatoes with boiling water, peel and cut into cubes. Add squeezed garlic.

Place the salad in a mound in a salad bowl, salt and pepper, pour over oil and vinegar. You can decorate the top with greenery.

Simple salad

Ingredients needed to make a simple salad:

  • sweet pepper – 1 kg
  • tomatoes – 2-3 pcs.
  • eggs – 3 pcs.
  • parsley
  • vegetable oil – 5 tablespoons
  • vinegar - 2 tablespoons

Cut the sweet pepper into strips and cook in salted water until almost tender. Drain the water, add oil, vinegar and salt.

Cool the pepper and place on a plate. Place tomato and egg slices on top.

Salad with cabbage and celery

Ingredients needed to prepare the salad:

  • cabbage - 500 g
  • carrots – 2 pcs.
  • celery – 3 leaves
  • vegetable or olive oil

Finely chop the cabbage and add a little salt. Grate the carrots, finely chop the celery and mix with cabbage. Season with vegetable or olive oil and add a little salt.

Salad with sauerkraut

Ingredients needed to prepare the salad:

  • sauerkraut - 700-800 g
  • olives – 1 jar
  • hot pepper – 1-2 pcs.
  • vegetable oil, salt

Mix sauerkraut with olives, add hot pepper, vegetable oil and salt. Perfect as a side dish for pork chop.

Ingredients needed to make walnut salad:

  • beets - 500 g
  • nuts – 300 g
  • garlic – 1 head
  • greens – 20 g
  • vegetable oil – 50 ml
  • vinegar – 40 ml

Boil the beets until tender, pour cold water over them, peel and cut into small cubes. If desired, you can grate it. Add nuts, squeezed garlic and season with oil and vinegar. Top with finely chopped herbs.

Horseradish salad

Ingredients needed to prepare the salad:

  • tomatoes – 4-5 pcs.
  • sour milk – 1 glass
  • horseradish root – 2 pcs.
  • green salad
  • parsley

Cut the tomatoes into thick slices and place on lettuce leaves. Beat horseradish with sour milk and pour over the tomatoes, sprinkle herbs on top.

Salad with lemon

Ingredients needed to prepare the salad:

  • carrots – 2-3 pcs.
  • lemon – 1 pc.
  • yolk – 1 pc.
  • celery root – 100 g
  • vegetable oil – 3-4 tablespoons
  • dill
  • parsley

Grate celery root and carrots. Pour in a sauce made from 1 yolk, lemon juice and zest, vegetable oil and salt. Mix well and garnish with finely chopped dill and parsley.

Light salad

Ingredients needed to prepare a light salad:

  • sweet pepper – 300 g
  • tomatoes – 300 g
  • onion – 1 pc.
  • parsley
  • sunflower oil – 2 tablespoons
  • vinegar

Cut sweet peppers into strips, tomatoes into slices and mix. Finely chop the onion and add to the vegetables. Pour oil and vinegar over the salad, sprinkle with parsley and salt.

Salad with sunflower oil

Ingredients needed to prepare the salad:

  • sweet pepper – 1 kg
  • vegetable oil

  • garlic – 1 head
  • greenery

  • vegetable oil – 3-4 tablespoons

Cut the tomatoes into slices and place on a plate. Squeeze the garlic on them and sprinkle with herbs. Drizzle the tomatoes with vegetable oil, add a little salt and pepper to taste.

Salad with rice

Necessary ingredients for preparing salad without mayonnaise:

  • bell pepper – 5 pcs.
  • rice – 100-150 g
  • green peas – 100 g
  • vinegar
  • salt and pepper

Bake the pepper in the oven and cut into strips, after peeling it. Boil the rice and sprinkle with pepper, add green peas. Season all this with salt, pepper and vinegar.

Green bean salad

  • green beans – 500 g

Boil the beans, drain the water and season with oil and vinegar, add a little salt. Sprinkle with herbs. Layer in a salad bowl: beans, tomatoes, beans, eggs, beans, onion rings.

How to make your own delicious Bulgarian salad at home

To make the dish the most beautiful and cheerful, you should choose a yellow bell pepper for it.

  1. We wash the cucumber and tomato under cold water, then remove the stalks, if any. We cut off the “butts” of the cucumber.
  2. Chop the washed vegetables into large enough half rings so that the juice remains inside the slices.
  3. We wash the bell pepper under the tap, halve it with a knife and remove the tasteless center with the seeds. Shred into longitudinal slices.
  4. Peel the onion head and cut it in half. Then use a knife to chop the vegetable into rings of medium thickness.
  5. Remove the olives from the jar, draining the brine. Of course, it is better to take those that are already pitted. Otherwise, you will have to remove the olive seed yourself before adding the ingredient to the salad.
  6. In a separate bowl, pour lemon juice over the onion rings, then season with pepper and lightly salt. The onion will release juice, which may be bitter - it should be drained.
  7. We wash half a bunch of fresh greenberries (you can choose the one you like best) and chop it not too finely, then put it in a salad bowl with the rest of the ingredients.
  8. Mix our Bulgarian salad, trying not to crush the ripe slices of vegetables. Season the dish with olive oil (about 1 tablespoon). Before doing this, squeeze a clove of garlic into a plate.
  9. Mix the appetizer carefully again. Now it’s time to add pickled cheese to the plate. At the same time, you can choose ordinary cheese.

How to prepare traditional Bulgarian salad at home

  1. First, prepare the sweet pepper, which should first be washed under cool water and dried.
  2. Preheat the oven to 180-190 degrees, then place our Bulgarian vegetable on a piece of foil.
  3. Cook it in the oven for about twenty minutes until it is completely baked. Then take it out and let it cool thoroughly.
  4. When the vegetable has reached room temperature, carefully remove the peel from it - the upper translucent film.
  5. Remove the seeds from the baked bell pepper, and then cut the flesh into cubes or as convenient as possible.
  6. Remove the peel from the onion head (it’s better to take non-bitter varieties for salad) and cut it in half. Chop into a medium cube.
  7. Grate soft cheese (most often feta cheese is used in the classic recipe) on a fine grater to obtain a homogeneous crumb.
  8. We wash the tomatoes and divide them into two halves, after which we chop them into small slices.
  9. We also wash the cucumbers, removing the “butts” of the fruit, and then chop them into small, but not too small, cubes.
  10. We take out a suitable salad bowl with high walls and begin to assemble our layered Bulgarian salad of vegetables and cheese in it.
  11. To do this, add tomatoes as the first layer. The tomatoes are followed by onion cubes. The third layer in the Shopska salad is sweet pepper.
  12. Place the green cucumber in the penultimate layer. At the same step, lightly season the dish with olive oil, simply sprinkling the ingredients on top.
  13. Lightly salt the treat; you can also add black pepper or crushed garlic.
  14. Pour the grated cheese on top, making a mound of the ingredient and thereby completing the preparation of the Bulgarian salad.

Bulgarian green salad

We continue to prepare salads in Bulgarian: we have already prepared Shopska salad and Greek in Bulgarian.

I really love salads made from fresh vegetables, and the highlight of them, perhaps, will be the dressing from balsamic vinegar And olive oil. When you don’t have to go to work in the morning, you can allow yourself garlic in your salad, but if the garlic spirit still bothers you, there are a couple of secrets:

1. Garlic should be consumed without the arrow in the middle, but fresh garlic does not suffer from this;

2. Milk is great for getting rid of garlic odor. I promise that we will add garlic in small quantities, it will not be the main ingredient.

In addition, the main ingredients are ordinary fresh vegetables: iceberg lettuce, arugula, frisee, red and green (yellow) peppers, red onions, tomatoes, cucumbers. This is a whole field for activity!

Although Bulgaria has wonderful tomatoes - pink, fleshy - not everyone loves them. You can make a delicious salad without them.

RECIPE FOR GREEN SALAD IN BULGARIAN STYLE

NECESSARY:

Green salads: 40 g arugula, 1/8 iceberg (or 2-3 leaves)
1-2 cucumbers
1 red onion (half if large)
40 g olives or black olives (half a can of canned)
2 cloves garlic
0.5 tsp. balsamic vinegar
1 tsp. olive oil
A handful of pine nuts


Bulgarian green salad

HOW TO COOK:

1. Take green salads: a little arugula, less than a quarter of a head of iceberg lettuce (a couple of leaves for two). Tear the salads with your hands - you don’t have to cut them: arugula, if long, into 2-3 pieces, iceberg - into squares.

2. Add a couple of small or a third of a long cucumber, cut into quarters (I divide the cucumber lengthwise into 4 parts and cut crosswise).

3. Cut half of the red onion into rings.

4. Also add a few black olives or olives.

5. Finely chop the garlic.

6. Season with balsamic and olive oil.

7. Sprinkle with pine nuts and enjoy the exquisite taste of fresh vegetables with spicy sauce!
